The Birdhouse restaurant will open on 2nd of September 2019. Save the date!
It is time for us to present you with our team of 7 professional trainers and 1 collaborator with a social vocation (coach):
Morgan, Director of the restaurant – whose experience, conviviality and professionalism will be the key of the restaurant success;
Johann, Chef Exécutif /Head Chef – who will handle the culinary management and the smooth running of the apprenticeship;
Nicolas, Second de cuisine/Sous-chef – who will put his creativity in the preparation of the menus and share his tips with our young trainees;
Steeve, social training (coach) – who will work on a personalised support with trainees, while preserving the objectives of a successful training;
Raluca and Julie, Two Rooms Managers – who will manage “service à l’anglaise” training, customers’ reception and all aspects of the service training;
Laurent and Kevin, Two Cooks – who will bring their knowledge and ‘savoir-faire’ to the trainees and support them in the menus’ preparation.
Apprentices have been recruited in collaboration with Cap Formation (OFPC) and other institutions or foundations. For school year 2019-2020, five young people have been selected for the cookery training and four for the service training.
Chiara, Fabio, Tiago, Jordan and, Aron will do the cookery training and Joanna, Fieruz, Marius and Franklin, the service training.
They all started school on the 26th of August and will spend 4 days/week at the restaurant and 1 day/week in a vocational training center.
During2 to 3 years (depending on whether they choose the Attestation Fédérale de Formation Professionnelle –AFP or the Certificat Fédéral de Capacité – CFC) the apprentices will familiarize with the different aspects of the work with the final objective of passing their diploma. The trainees will learn to develop a creative cooking, favouring local and seasonal products, in a sustainable environmental approach both for the apprentices and the customers.
The aim of the Birdhouse is to accompany young people in their career by offering them a diploma training, leading to sustainable employment and reintegration into the community.
